3 Minute Pancakes | SweetSavour
As a busy mom, when I wake up in the morning, it is to the sound of my little boy either giggling or crying in his crib, just waiting for me to bring him a warm bottle – breakfast! I definitely could do better on my routine, BUT what’s great is a fast pancake recipe to get me going for the day. As always, seeking to please the masses, this recipe is originally gluten and dairy free, but if you wish to use normal flour, just sub it for the flours mentioned in the recipe (I would keep the oats though).
1/4 cup Oat flour
1/4 cup Oats
3 T Teff flour (gluten free alternative, looks and tastes just like whole wheat flour)
1/4 tsp Baking powder
1/2 tsp Salt
3+ T almond milk (if you use unsweetened you may want more honey)
1 tsp honey
Get a pan heating on the stove, or better yet, a cast iron skillet.
Add all the dry ingredients, do a quick stir, then add the wet ingredients. Add as much almond milk as you desire until it reaches a consistency you like. This recipe technically makes 2 small pancakes, one pancake plus 1/4 cup of blueberries is around 300 calories, I typically eat 5, 320 calorie meals a day so this fits that bill perfectly. BUT if you’re making them for more than just yourself, I would double it, triple it as needed!
I typically add some avocado oil to my skillet (or pan) and grill the pancakes until golden brown. Top with some butter (my favorite dairy-free butter is Country Crock Plant Based Butter) and a little honey, yum yum yum!
