Homemade Chocolate Truffles | SweetSavour
Happy Valentines week! Whether you have a special someone to share this holiday with or not, chocolate can ALWAYS be part of the equation. This is not your oh so typical sugar-filled fake chocolate, this is the REAL stuff. And the best part? It only takes 5 minutes to make!
- 1/2 cup Cacao (or cocoa) powder
- 2 T cashew butter (less intense flavor so you taste more chocolate)
- 1 T Coconut oil (melted)
- 3 T Raw honey
- 1/8 tsp Vanilla extract
- 1/4 – 1/2 cup powdered Monk fruit (blend Monk Fruit in a blender, I used a Bullet Blender)
- 1 tsp to 1 T Salt (I LOVE lots of salt)
Melt the coconut oil in the microwave for about 30 seconds, sometimes I add the cashew butter and honey too to help them all combine easier. Add all your wet ingredients and mix until combined. Then add your dry (minus the salt). After the cacao is mostly incorporated I just used my hands and the chocolate should become a dough-like consistency. I would then slowly add salt a teaspoon at a time until you get the zing you prefer. Lastly, roll the dough into bite sized balls and cover with powdered Monk fruit!
