Baked Sweet Potato | SweetSavour
Nothing is quite so tasty as a freshly baked sweet potato with some butter and salt! Or cinnamon and sugar! What I love about sweet potatoes is that they are lower in calories than regular potatoes – more for me to eat! And if you’re watching your calories, you can easily convert this from a meal to a snack.
- 1 Raw sweet potato
- 1 T Butter (I use Country Crock Plant Butter, tastes just like regular butter)
- 1/4 cup raw seed mix (I like sunflower and pumpkin seeds)
Pre-heat your oven to 400 degrees. Wash the outside of the sweet potato really well and use either a fork or knife to puncture holes all around the potato. Once the oven is pre-heated, bake the potato right on the rack (or on a pan) for 45-60 minutes. The time honestly depends on the size of the potato. I check it at 45 minutes and see if I can run a knife through the potato without any resistance. When in doubt let it cook a little longer.
I typically will either make my baked potato the day before and save it, or just pre-heat the oven and pop it in an hour before I know I want to eat next. Enjoy with some butter and salt and your seeds!
A full sweet potato runs around 100 calories, the seeds around 140 calories, and the butter around 100 calories. I typically consume 320 calorie snacks, so I would eat half the potato to reduce the calorie intake.
